Gluten free, sugar free and dairy free muffins!

These have got to be my all time favourite recipe!! And whats awesome is they are Gluten free, sugar free and dairy free! Perfect! Guilt free indulgence!

I eat an abundance of these throughout the week! I cannot keep up with demand, my husband constantly complaining that there is not enough made in each batch! So I am going to have to up my volume! The children have even started eating them! With the increasing concern for the amount of sugar children are consuming nowadays, its wonderful that there are so many alternatives now that children can eat. The girls are very aware about sugar and therefore have lots of alternatives rather then chocolate, sugary drinks etc. They only drink water, they have porridge for breakfast with raw honey on top and many other non refined recipes I make.

These muffins are dead easy to make, I have included the recipe below! One big tip, get extra fine almond flour if you can, as the finer the better and fluffier they will be. You can make these muffins with blueberries or apples….they are best when they come out of the oven but can be eaten cold afterwards or sometimes I heat them in the microwave for 30 seconds and have with a cuppa!

Fat-Burning Blueberry Muffins (delicious!)

1 cup pure almond butter
1 cup almond meal/almond flour (get extra fine if you can and organic)
3 organic eggs
½ cup organic raw honey
⅓ cup unsweetned shredded coconut
⅓ cup Virgin Coconut Oil, melted
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon sea salt
pinch of cinnamon
½ cup fresh/frozen blueberries or any fruit you want

Preheat your oven to 350 degrees. Mix all ingredients together. Line muffin tin with tin muffin cups or silicone muffin cups. Place ingredients in muffin cups and bake for approx. 15-20 min. Recipe makes approx. 8-10 muffins.
