Breakfast ideas for the health conscious…

I have always been an avid breakfast eater all my life, I never skip breakfast, unless I am unwell or particularly rushed! I have to say though I need recipes that are very quick and easy to make as I am time poor, so the below do not take long at all and in fact I pre-cook the quinoa the night before for the first recipe below to save time.

After following the Danette May plan its really helped me to get more adventurous with my breakfast habits. So I wanted to share with you a few of the breakfasts I eat throughout the week. I try and vary it every day!

ACV Elixir! – To my husbands disgust (as he hates it!) I drink an Apple Cider Elixir EVERY morning without fail at least 1 hour before I eat breakfast. It cleanses the palette and kick starts your medabolism and aids weight loss too! Bonus! I mix 1 tsp or two of ACV with 1 juice of a lemon, you can use half if its too much for you! I like it strong! Then a pinch of cayenne pepper and I have also recently started adding in tumeric which is a natural anti-inflammatory and a super healing food!

Quinoa Coconut – My all time favourite is the quinoa coconut breakfast! I put some coconut oil in a saucepan on medium heat, then I add some cinnamon (I do not really measure these items anymore, but say about a tsp of each) then I add a half a cup of uncooked quinoa and mix it about. I pour in some coconut milk (Alpro I find great) just enough to cover the quinoa nicely and simmer it for about 10 minutes or until quinoa cooked if it soaks up the milk and still not cooked add a bit more milk in. Then I take it off the heat, add a tbsp of 100% natural unsweetened desiccated coconut and mix it up, then drizzle some Pure Canadian Maple Syrup or Raw Organic Honey and then add your desired fruit to the top! it is SO tasty and very filling, gets me through the morning!

Lactose free porridge – Another favourite and a filling one is my lactose free porridge, I use gluten free porridge oats which are also unsweetened and have no nasties in! Add about 1/2 cup of porridge oats into a saucepan on a medium heat, add in 1tsp of organic cinnamon and either almond milk or coconut milk. Simmer until cooked! You can always add some raw organic honey or Canadian pure maple syrup if you want it a bit sweeter, add sliced bananas to the top and consume!

Banana pancake – Mash up one banana in a bowl, add x2 organic egg whites, 1 tbsp organic cinnamon, 2 tbsps of water and 1/4 cup of gluten free unsweetened oats. mix it all up well and add to a non stick (make sure its a good non stick pan otherwise a mush will occur!) with a blob of coconut oil in, turn once one side is cooked. This pancake is totally yummy!

Scrambled egg, spinach and turkey bacon  – Oh I love scrambled eggs! I use 3 eggs give them a whisk with a fork and add to a saucepan and cook until you get to your desired texture, I add nothing else in! Some people add, milk, butter etc there is no need! Then in the meantime I have cooked my spinach until it wilts, and turkey bacon, you can add some tomatoes or mushrooms if you wish. What I love to do is drizzle balsamic vinegar or apple cider vinegar on once everything is cooked and on the plate!

Dream cocao smoothie – This is one of my favourite smoothies and I drink a lot of it and its not just for breakfast! I eat it for dinner or lunch or sometimes in-between meals if I am really peckish! In a smoothie mixer, mix half an avocado, one banana, 1tsp Maca powder, 1 tbsp hemp protein powder or hemp seeds, 1 tsp organic cinnamon, 1 tbsp of organic raw cocao, a handful of kale, Kefir and some water, mix and enjoy! If I am going out I will take this with me in my smoothie bottle. You can mix icecubes in it if you want to make it cooler. Put it in a cool bag and it’ll keep for a few hours.

Pumpkin Waffles – I made these around halloween as its tricky to get pumpkins at any other time of the year! I got the recipe from Danette May like most of my recipes! http://danettemay.com/flavorful-pumpkin-waffles/ I made a big batch of them back in October and kept them in the freezer and would pop one in the toaster to defrost and cook and drizzle with maple syrup and top with fruit. I invested in a waffle maker, I am just about to make a new batch of waffles but they are going to be banana ones this time!

Greek Yoghurt, simples! – I LOVE Greek yoghurt and there is no better more simpler breakfast then just natural unsweetened Greek yoghurt with fruit, if you want you can add in raw organic honey but I like it just as it is.

I also might sometimes have my Muffins for breakfast! quick and easy if you have batch made them! Add in a bit of Greek yoghurt with them!
